So here are a few yummy dinner ideas from last week! Most are healthy but there is one that is probably considered not on the healthy side.. It's calorie count is probably to high!
So for the first dinner idea... We have:
2 -Chicken strips
Cottage cheese
and a salad.
The salad consists of ice berg and romaine lettuce, tomato, bell peppers, spinach, cheese and a small amount of Italian dressing.
This is the meal that probably is up high on the calorie count!
Here we have:
A chicken strip sandwich.
Sandwich consists of... 2 chicken strips, Italian bread, Italian mixed cheese.
Handful of french fries
and 4 or so dill pickles.
This meal was pretty yummy! Khaleesi helped me eat all of it!
For this one we have:
A black bean burger on a whole wheat bun, and a little cheese.
Garlic and hummus tortilla chips (1 serving)
salsa
Protein blend veggies
this meal total consisted of 622 calories. I consumed a little less since I had help eating it :)
The protein blend veggies turned out really yummy. I decided to take some with me the next day to eat with my lunch. (will post this meal too!)
For most of my dinner meals I try and stay at around 500-600 calories. Sometimes less.

Sausage Peppers and Onions!
Sausage Peppers and Onions!!
That's right folks! We watched a video on facebook and it had a delicious looking meal on it! Not one of my usual healthy meals! I hope you enjoy!
Now when my husband made these ...
He used jalapeƱo and cheddar smoked sausages, onions, peppers, garlic, whole wheat bread, an Italian mix for the cheese and a sprinkle of Parmesan cheeses.
When these were cooking they made the whole house smell DELICIOUS!

Lunch Ideas
Simple Lunch Ideas
Here are a few simple and healthy lunch ideas for you to try! My hope is that when I post lunch ideas, it gives you perhaps something different to want to try, and may even inspire a new meal idea for you! I am not perfect and I do not eat as healthy as I should all the time. It's not easy and I am still a work in progress.
For the first picture here...
I have a salad (lettuce, tomato, a little shredded cheese, and 1/2 serving of Italian dressing)
the salad also has shredded chicken in it (leftovers from the night before dinner)
Reg globe grapes
Sweet potato popcorn chips
And a serving of cooked carrots
This lunch is a pretty simple one too.
Here we have:
A wholewheat pita pocket.
Stuffed inside is sun-dried tomato turkey, 1/2 slice of mozzarella cheese and just a tad red pepper hummus spread on the inside. Usually I like to add tomato slises and lettuce, unfortunatly I had neither this time. :(
1/2 serving of cottage cheese
1/2 serving of cooked carrots
4 little dill pickles
And a serving of sour cream mini rice cakes

White Chicken Chili
White Chicken Chili
So I was trying to think if something quick and yummy, and healthy if possible on the way home this evening. And I decided on white chicken chili. WCC is super yummy and pretty quick and easy to make.
*2 cans of white beans
*1 can of chicken
*white chicken chili seasoning
*1.5 cans of rotel (I had one already opened that I had in the fridge) (or just canned tomatoes)
*1/2 of the container of vegetable broth
Here we have an image of it all mixed together on the stove. Everything goes in at one time. I drain my beans and chicken before placing in pan. Once everything is opened and put on to cook, it only takes 15-20minutes for it to cook.

Another day
Another day said and done! In this issue I actually have a few different meals and snacks to share!
I have a breakfast meal, a snack and a dinner meal that I enjoyed and photographed for ya'll.
As you may or may not know, I track my food daily on sparkpeople.com I keep record because I am and have been working on losing weight. I have been working towards my goal for 18 months give or take now, and it's been going pretty well I think. Recently in January I dropped my calories down to 1200-1400 daily intake. I am usually pretty good about staying in those amounts, but I do treat myself every now and again. I have lost around 10lbs since I lowered my calories. Not the greatest but it's something. I am sure if I added more exercise I would have more gone. Anyways~
Here is a yummy breakfast:
Here we have: 2 slices of turkey bacon
A everything bagel thin
scrambled egg with tomato and jalapenos
Total calorie count: 240
A healthy snack!
A baked sweet potato! I just scooped it out of the skin and mashed it up a bit. I did sprinkle a little cinnamon on it to see what I would think. Only around a 60 calorie snack!
And then we have DINNER!
For dinner we have:
Black bean burger in a everything thin bagel, with a 1/4 of a slice of mozzarella cheese.
A 1/4c of cottage cheese.
roasted carrots, zucchini, onions, and peppers.
Total calorie count: 488
For me Khaleesi, helped me eat! She had several bites of each. I love that she is such a good eater. :)
Now you may be wondering, well what did she have for lunch? LOL Well we went to Wendys and I had a spicy chicken... not the best for calories or not the healthiest of meals either. But it is what it is. I am not going to post every single thing I eat, nor am I going to be able to post daily. But I will try and post as often as possible!

First post!
I am sure most of you have never seen a post by me on instagram or facebook. But if you have, you would know I post a lot of photos of meals I am eating or trying out a new recipe. I love posting photos of the meals I am trying, it helps me along in my journey to lose weight and become more of a healthy geeky momma, lol.I am really new to blog posting, so please bear with me I am sure I have a lot to learn and who knows if anyone will actually read or subscribe to my blog. But if nothing else it will be another way for me to document new meals and recipes I try along the way!
I do try and post healthy meals and snacks, but sometimes there are a few other things that sneak in!
I would like to dedicate my first blog post to my good friend Chasity! She is one of the people who has encouraged me to publish a foodie blog!
For my FIRST foodie picture and meal.....
This meal is a relatively simple meal. Pretty easy to put together and around a 35 minute prep/cook time. Roasted veggies consist of : tomatoes, onions, yellow squash, and green bell peppers. The pork chop has barbecue sauce on it, and was baked in the oven as well. And then you have a nice serving of boil in a bag brown rice. I love this sort a meal, healthy, yummy, easy , and pretty low on my calorie scale!
